The Amazonia 3 times. This is the place that grought me to the biggest swift in my way of seeing the world. A place with a huge biodiversity, in most part descyphered by these ancestral groups.

The ceviche, already famous, but also the encocado, a recipe from the Coast with seafruits bathing in a coconut sauce.

The pure energy of this country: giant volcanoes able of strong reactions, the Amazonia that seems chaotic with a proper logic and rules, and the Galapagos, natural paradise that looks like never touched.

The Voclan Imbabura, a 4,609m giant that dominates the province of the same name and from which one cannot take one's eyes off when walking between Otavalo, Ibarra and Cotacachi.

All shrimp dishes: with a coconut sauce, ajillo sauce, in Ceviche... It is one of Ecuador's specialities, they come directly from the Pacific and are deliciously fresh. Accompanied by a fruit juice, another Ecuadorian tradition, to be savoured on the beach!

What impresses me the most here is the Biodiversity, I have the impression to discover every day a new plant, a new animal. It doesn't matter if you are on the coast, at an altitude of 2500m or in the heart of the Amazon, here nature is luxuriant and offers us its eccentricities wherever we are.

Going to Mompiche during a long week-end. This little wild western town is perfect if you need to relax, and maybe try to do some surf.

Fruits! There are so many! I am still discovering and testing some that were unknown to me before. I love to pass the door of little fruits and vegetables shops, get some information and experiment!

I love to take a good plate of "arroz con camarones" (rice with shrimps). It is still better when you are in the coast where shrimps are very affordable! A very simple food but very tasty!

I am always fascinated to see how much climate and vegetation can change in just a few kilometers away. We move from one ecosystem to another in a very short time.
